Beef roma pie

  • 4 sheets puff pastry
  • 500g lean mince
  • 450g jar of your favourite pasta sauce
  • 2 cups frozen peas, corn and capsicum, thawed
  1. Preheat oven to 200c
  2. In a non-stick frying pan brown mince, add veges and season.
  3. Pour in simmer sauce and simmer for 10 minutes.
  4. Whilst simmering, cut 6 large rounds into each sheet of pastry. Line a non-stick muffin tray with the first 12 rounds, spoon in mince mix and top with final rounds of pastry. seal with a fork.
  5. Bake for 20 minutes or until pastry is nice and golden.

Makes 12

 
  • Coles frozen puff pastry sheets
  • 500g lean mince
  • 450g jar pasta sauce
  • Frozen peas, corn and capsicum

Caramel, choc truffles

  • 380g can caramel top 'n' fill
  • 2 tbs. butter
  • 250g plain chocolate biscuits, crushed
  • ¾ cup desiccated coconut
  1. Combine caramel and butter in a pan, bring to the boil stirring, remove from heat.
  2. Add biscuit crumbs and mix well.
  3. Refrigerate for 1 hour. Roll heaped teaspoons of mixture into balls, coat in coconut, chill until firm.
