BBQ lamb forequarter chops and sausages with Greek salad

4 Coles Forequarter chops

Coles Finest™ sausages

3 tomatoes
-
1 red onion – thinly sliced
-
1 continental cucumber - coarsely chopped
-
200g marinated Danish feta cheese – diced into small cubes
-
100g Colossal kalamata olives
-
1 tsp dried oregano
-
1 tsp salt
-
½ cup olive oil
-
¼ cup white vinegar or lemon juice
BBQ forequarter chops

Allow 1 forequarter chop per person.

Brush with olive oil and top with salt and pepper and oregano before barbecuing.

When cooked squeeze over lemon and serve immediately.

Serve with a lemon wedge on the side.
Greek Salad

Coarsely chop tomatoes and place in salad bowl with thinly sliced red onion rings, coarsely chopped cucumbers, feta cheese and olives.

Sprinkle with salt and dried oregano.

Combine oil and vinegar (or lemon juice) and drizzle over salad. Toss to combine.

Voula’s Greek meat balls with savoury rice and tzatziki

1 kg beef mince
-
2 tbs olive oil
-
2 Smart Buy™ eggs - beaten
-
2 cloves garlic - minced
-
1 brown onion - grated
-
1 cup breadcrumbs
-
1 tsp dried oregano
-
4 tsp parsley - finely chopped
-
salt & pepper
-
2 cups Smart Buy™ rice
-
1 red capsicum
-
½ bunch spring onions
-
1 tub Black Swan tzatziki
-
Saute onion and garlic in a little of the oil until softened.

In a bowl, combine beef mince, beaten eggs, breadcrumbs, oregano, parsley, sautéed onion and garlic, salt and pepper, and remainder of the oil.

Mix well.

For better flavour, let all ingredients stand for 30 minutes.

Roll into balls – and flatten very slightly.

Fry or barbecue until brown

Squeeze lemon juice over keftethes while still hot.

Steam or boil rice. While still warm, drizzle with a little olive oil and season with salt & cracked pepper.

9. Add finely chopped red capsicum and spring onions.

Serve in a bowl with 5 or 6 meatballs per person and a spoonful of tzatziki.
