Spring salad

  • Coles baby cos lettuce
  • 50g walnuts
  • 1 apple with skin on, finely sliced
  • 4 spring onions, finely sliced
  • ½ cup feta, broken into pieces
  • Mint for garnish
  • Dressing

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper
  1. Combine ingredients in a bowl and toss with the dressing

Tomato and chickpea salad

  • 1 punnet cherry tomatoes, halved
  • 400g can chickpeas, drained
  • 1 red onion, finely sliced
  • 100g kalamata olives*
  • 2 tsp capers; parsley for garnish
  • Dressing

  • Juice of ½ lemon
  • 3 tbsp olive oil
  • Pinch of sugar
  • Salt & pepper
  1. Combine ingredients in a bowl, drizzle with dressing.
  2. Delicious served with crusty bread

  • 1 punnet cherry tomatoes
  • 400g can chickpeas
  • 1 red onion
  • 100g kalamata olives*
  • 2 tsp capers
  • parsley for garnish
  • 1 lemon
  • Olive oil
  • Sugar
  • Salt and pepper

Tomato, feta and basil quiche

  • 2 eggs, beaten
  • ½ cup milk
  • 2 tbsp cream
  • ½ cup grated tasty cheese
  • pinch nutmeg
  • Shortcrust pastry
  • Salt & pepper
  • Topping

  • Handful of cherry tomatoes, halved
  • Handful of feta, crumbed
  • Basil leaves
  1. Preheat oven to 180°C. Line a 20cm flan tin with pastry. Blind bake for 20 minutes
  2. Sprinkle base with grated cheese
  3. Whisk together the eggs, milk, cream, seasoning and nutmeg and pour into pastry case

  5. Bake for 30 mins or until set
  6. Top with tomatoes, feta and basil

Chicken salad wraps

  • Chicken
  • 4 sheets mountain bread
  • Few cos lettuce leaves
  • Half a cucumber, sliced
  • 1 tomato, sliced
  • 1 tsp mayonnaise
  • Salt & pepper
  1. For one wrap, place two pieces of bread together.
  2. Spread with mayo, layer lettuce, chicken, tomato and cucumber.
  3. Season to taste.
  4. Roll up tightly and wrap in greaseproof paper.

Spring vegetable frittata

  • ½ cup milk
  • 2 zucchini, sliced lengthways
  • 1 bunch asparagus, ends trimmed
  • 2 potatoes, cooked and sliced
  • 4 eggs, beaten
  • 2 tbsp cream
  • ¼ cup grated cheese
  • Salt & black pepper
  1. Pre-heat oven to 180ºC. Layer vegetables in an oven-proof dish.
  2. Combine eggs, cream, cheese and seasoning and pour over vegetables.
  3. Bake for 40 minutes.

  • 4 eggs

  • Grated cheese
  • Salt & black pepper

Marinated chicken wings

  • Chicken wings
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • Small piece of ginger, chopped
  • ¼ cup peanut or canola oil
  • Few drops of sesame oil
  • Sesame seeds
  1. Combine all ingredients
  2. Toss the wings through the marinade for 2 - 4 hours before grilling or barbecuing
  3. Sprinkle with sesame seeds and serve

BBQ Feast

  • Red wine
  • Salt & pepper
  • Rosemary
  • Lemon
  • Garlic
  • Rump Steak
  • Lamb forequarter chops
  • Chicken wings
  • Soy
  • Honey marinade
  • Vegetables
  1. To marinate enough meat for 4 people, make a marinade of red wine, olive oil and salt & pepper for steak.
  2. Before cooking rub in coarsely ground black pepper.
  3. Marinate chops in rosemary, lemon and garlic.
  4. For chicken wings, soy, olive oil and honey marinade is perfect.
  5. Marinate meats for at least 2 hours then grill on a hot barbecue.
  6. For char-grilled vegetables, brush halved zucchini, capsicum, red onion and asparagus with olive oil and lemon before cooking.

Serves 4 (Costing of $10 is based on ½ rump steak, two chicken wings, one lambchop and a serving of vegies per person.)
