Strawberries

Tips:

  • Storing: Keep in the fridge in the packaging to keep fresh. Wash strawberries just before eating for best results in running cold water, then pat dry gently as to not damage the fruit.
  • Sweetness: Remove strawberries from fridge and bring to room temperature prior to eating. Add a dusting of icing sugar for a real sweet treat.
  • Near useby: If you have left over strawberries that need to be used, blend them up with other fruits and yogurt to make a smoothie.

Chocolate treat in 3 easy steps

  1. Put some water in a small saucepan and rest a mixing bowl above the water.
  2. Heat to a simmer and melt chocolate until gooey. Quickly remove from heat and dip strawberries one by one.
  3. Place on a tray covered with baking paper and chill in fridge until chocolate sets. Yum!

Fruity pavlova

  • Pre-made Coles pavlova base.
  • 3 egg whites
  • 4 tbsp caster sugar
  • ½ tsp white vinegar
  • ¼ tsp cream of tartar
  • 1 tsp cornflour
  • ½ tsp vanilla extract
  • Topping

  • Cream
  • Fresh seasonal fruit, sliced
  1. Preheat oven to 150°C.
  2. Line a baking tray with baking paper.
  3. Beat egg whites until fluffy. Slowly add other ingredients.
  4. Continue to beat until soft peaks form.
  5. Spoon onto the paper into a cake shape base.
  6. Bake for 15 minutes, then reduce oven to 120°C and bake for 1 hour.
  7. Turn oven off and allow to cool with door open.
  8. Spread whipped cream over and top with fruit.

Strawberry and apricot frappe

  • 250ml can apricot juice
  • 6 large strawberries, chopped
  • 1 tbsp low fat yoghurt
  • Ice cubes
  1. Blend ingredients until smooth
  2. Serve in a chilled glass with extra ice

  • 250ml can apricot juice
  • 1 punnet of strawberries
  • Low fat yoghurt

Berry ice-cream log

  • 2 litres vanilla ice-cream, softened
  • 2 x 375g punnets of strawberries, hulled
  • 2 x 120g punnets of raspberries
  • ¼ cup pure icing sugar
  • Extra berries, to serve
  1. Line a 14cm x 21cm loaf pan with baking paper. Spread softened icecream over base of prepared pan.
  2. Freeze for 1 hour, until firm.
  3. Meanwhile, place strawberries, raspberries and icing sugar into a blender, and blend until smooth.
  4. Strain into a jug, discarding seeds.
  5. Pour over ice-cream and freeze overnight.
  6. Remove from freezer
  7. Minutes before serving. Invert onto a serving platter.
  8. Cut into slices and serve with extra berries.

  • 2 litres vanilla ice-cream, softened
  • 2 x 375g punnets of strawberries
  • 2 x 120g punnets of raspberries
  • Pure icing sugar
  • Extra berries

Strawberry and honey cheesecake

  • 375g cream cheese, softened
  • 3/4 orange juice (fresh)
  • You’ll Love ColesTM thickened cream
  • 200ml tub You’ll Love ColesTM lite sour cream
  • Strawberries
  • 1/4 cup Farmland caster sugar
  • 250g pkt Unibic Sponge finger biscuits
  • Capilano twist & squeeze honey
  • Pink food colouring
  • White chocolate
  1. Line base and sides of 7cm deep, 11cm x 21cm (base) loaf pan with baking paper, with 3cm overhang.
  2. Using an electric mixer, beat cream cheese, sugar and honey until smooth. Beat in sour cream and fold in strawberries.
  3. Dip 1/3 of biscuits into juice one at a time and arrange in base of pan to completely cover. Spread with half of cream cheese mixture. Repeat layers, finishing with a layer of biscuits. Cover and refrigerate for 4 hours or overnight, until set.
  4. Place white chocolate and cream in a microwave-safe bowl and microwave on MEDIUM-HIGH (70%/750W) for 2 minutes, stirring after 1 minute. Colour mixture pink. Cool in refrigerator for 10 minutes, until just starting to set. Turn cheesecake onto platter and spread with chocolate mixture.
  5. Decorate with extra strawberries and serve.
