French Toast with blueberries & maple syrup

1 egg

½ cup milk

4 slices of sourdough sliced loaf

1 punnet of blueberries

Maple syrup
-
Icing sugar for dusting

Mix egg and milk with a whisk in a shallow dish.

Soak bread slices in mixture.

Heat butter in frypan over medium heat.

While in pan, cut a few incisions in bread and insert a few blueberries.

Lightly fry on both sides until golden.

Serve with fresh blueberries that have been tossed in a little Maple syrup.

Scatter over toast and dust with icing sugar.
