Fruity pavlova

  • Pre-made Coles pavlova base.
  • 3 egg whites
  • 4 tbsp caster sugar
  • ½ tsp white vinegar
  • ¼ tsp cream of tartar
  • 1 tsp cornflour
  • ½ tsp vanilla extract
  • Topping

  • Cream
  • Fresh seasonal fruit, sliced
  1. Preheat oven to 150°C.
  2. Line a baking tray with baking paper.
  3. Beat egg whites until fluffy. Slowly add other ingredients.
  4. Continue to beat until soft peaks form.
  5. Spoon onto the paper into a cake shape base.
  6. Bake for 15 minutes, then reduce oven to 120°C and bake for 1 hour.
  7. Turn oven off and allow to cool with door open.
  8. Spread whipped cream over and top with fruit.

So simple apple tart

  • Coles frozen puff pastry sheets
  • 4 apples
  • 1 tbsp icing sugar
  • Butter
  • Topping

  • 4 apples, sliced thinly
  • 1 tbsp icing sugar
  • Melted butter for brushing
  1. Preheat oven to 180°C. Lay out pastry sheet onto a baking tray and prick all over with a fork.
  2. Layer apples onto pastry, leaving a 10mm edge, for pastry to puff up. Brush apples with butter. Bake for 40 minutes.
  3. Allow to slightly cool. Serve warm, dusted with icing sugar and cream or ice cream.

French Toast with blueberries & maple syrup

  • 1 egg
  • ½ cup milk
  • 4 slices of sourdough sliced loaf
  • 1 punnet of blueberries
  • Maple syrup
  • Icing sugar for dusting
  1. Mix egg and milk with a whisk in a shallow dish.
  2. Soak bread slices in mixture.
  3. Heat butter in frypan over medium heat.
  4. While in pan, cut a few incisions in bread and insert a few blueberries.
  5. Lightly fry on both sides until golden.
  6. Serve with fresh blueberries that have been tossed in a little Maple syrup.
  7. Scatter over toast and dust with icing sugar.

Fruit and vegie skewers

    Fruit Skewer

  • Pineapple or cantaloupe – cut into star shapes using a cookie cutter
  • Kiwi fruit
  • Strawberries – halved
  • Watermelon – cut into chunky triangles
  • Apple – cut into wedges
  • Vegie skewer

  • Chunks of thin salami (twiggy sticks)
  • Celery chunks
  • Whole cherry tomatoes
  • Cucumber chunks
  • Cheese - cubed
  1. Cut fruit and vegetables into interesting shapes and place on wooden skewers.
  2. Serve together in a tall glass jug or vase with long thin celery sticks.
