Asparagus salad
2 bunches of asparagus spears – trimmed
1 hass avocado – sliced thinly
Shaved parmesan
Olive oil
Lemon or lime juice
Salt & pepper
Blanch asparagus and plunge in ice cold water.
Plate up with sliced avocado.
Top with shaved parmesan.
Drizzle with olive oil and lemon or lime juice.
Season with salt and pepper.

Coles baby cos lettuce
50g walnuts
1 apple with skin on, finely sliced
4 spring onions, finely sliced
½ cup feta, broken into pieces
Mint for garnish
Dressing
3 tbsp olive oil
2 tbsp balsamic vinegar
Salt & pepper
Combine ingredients in a bowl and toss with the dressing.
