Asparagus salad

  • 2 bunches of asparagus spears – trimmed
  • 1 hass avocado – sliced thinly
  • Shaved parmesan
  • Olive oil
  • Lemon or lime juice
  • Salt & pepper
  1. Blanch asparagus and plunge in ice cold water.
  2. Plate up with sliced avocado.
  3. Top with shaved parmesan.
  4. Drizzle with olive oil and lemon or lime juice.
  5. Season with salt and pepper.

Spring salad

  • Coles baby cos lettuce
  • 50g walnuts
  • 1 apple with skin on, finely sliced
  • 4 spring onions, finely sliced
  • ½ cup feta, broken into pieces
  • Mint for garnish
  • Dressing

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper
  1. Combine ingredients in a bowl and toss with the dressing.

Chicken and mango salad

  • 2 cooked chicken breast, sliced
  • 1 mango, peeled and diced
  • Mint leaves
  • Bean sprouts leaves
  • 2 chillies, finely sliced
  • Spinach leaves
  • Bean sprouts
  • Dressing

  • Juice of 1 lime
  • Sesame oil
  • Soy sauce
  1. Combine the ingredients, pour over the dressing and serve at once.
